There are so many recipes around for skinny lemon cupcakes but the one I have used is from the Hairy Bikers, "The Hairy Dieters" recipe book. The reason why I like this particular recipe is because they include blueberries as well as lemon. The recipe is so easy to follow and each cupcake is 167 calories which if you are a calorie counter like me is more appealing then a 200+ calorie treat.
What is needed:
For the cake
200g self raising flour
1tsp bicarbonate of soda
75g golden caster sugar (I just used normal)
Zest of 1 lemon
2 large eggs
50ml of natural low fat yogurt
2tbsp of milk (semi skimmed)
50ml of oil (I used a small dash)
For the icing
100g icing sugar
4-4 1/2 tsp lemon juice
1.Preheat the oven to 180c (fan)/gas 6. Line a 12 hole muffin tin.
2. Sift flour and bicarbonate of soda together in a large bowl then stir in sugar, blueberries and zest. Make a well.
3. Beat the eggs with a whisk until smooth, then beat in the yogurt, milk and oil. Stir into flour mix with a large metal spoon until very lightly mixed.
4.Immediately divide the batter mix and bake in the centre of the oven for 16-18 mins or until cupcakes are well risen and golden. Take them out to cool.
5. Mix icing sugar and the lemon juice together until smooth. Wait for cupcakes to cool and then drip the icing on and leave to set.
7. Eat low calorie (167 calories per cupcake) lemon drizzled cupcakes guilt free.
